Our celery is grown in full lighting conditions, making it have full green coloration along with a richer, stronger celery flavor. Most grocery store celery is either blanched or is a self-blanching variety. Blanching is a method of blocking light from reaching the main celery head, which results in a pale color and mild flavor. If you like celery flavor, our celery it is still great for eating fresh, and the stronger flavor also makes it ideal for cooking.
